Chips and Salsa

So damn addictive.  This has only become a recent obsession of mine.  I could eat them until I explode, but I won’t because that would be a terrible mess for someone to clean up :3

Auryn’s Awesome Southwest Chicken

You will need a slow cooker/crockpot for this recipe

1 can Chili beans (I use Bush’s red chili beans medium heat)

1 can black beans (I use Bush seasoned recipe) (If you use the seasoned ones don’t drain or rinse.)

1 can corn (drained and rinsed)

1.5 lbs chicken boobs

1 16 oz jar of salsa (I use Pace chunky medium)

Shredded cheese (I like the Kroger brand Habenero cheese, but cheddar works too)

Shot of tequila, splash of lime juice (both optional)

Tabasco sauce (for heat, can be added before or after cooking on an individual basis)

Combine the beans with half the salsa in the crockpot.  (This is when you would add the tequila and lime if you’re using it)  Place chicken on top, pour the remaining salsa over the chicken.  Cover and let cook.  Low for 7-8 hours.  High for 3-4.  (I recommend the 8 hour cook)

Now the cheese can be done several ways (Mr Auryn doesn’t like a lot of melty cheese, so I’ve adjusted) 

-If you like big globs of melty cheese, you can sprinkle a handful on the chicken once it’s done cooking, and cover to let it melt.

-If not, you can do like Mr Auryn and I do, and once you’ve filled your bowl, with the beans, sprinkle cheese on that and mix.

Serve over rice.

I love this recipe.  It’s easy, pretty inexpensive and tastes frackin’ awesome.  The chicken is spoon tender and is even better when it’s reheated.
